The age-old olive trees known in dialect as “Auru te Ulie” in the local dialect, which means “gold,” because olive oil was considered like a precious metal by the local people.
The Nero di Troia “AURU” is the wine that most embodies the character of the peasant culture in Puglia: warm, nicely tannic, and spicy. With a ruby red color and violet reflections, the AURU possesses a rich sensory profile with notes of ripe plum, black pepper, coriander, and licorice. On the palate, the wine is intense, persistent, and moderately savory, with tertiary hints of cocoa and coffee.
The AURU pairs well with cured meats and traditional fresh pasta, such as “orecchiette” with broccoli rabe.
