Can Sumoi Ancestral Montonega is a sparkling wine from Spain that's made using traditional methods, organic and biodynamic practices, and minimal intervention. Here are some of its characteristics: 
Taste: A refreshing, balanced, and characterful wine with notes of white fruit, Mediterranean herbs, and a dry, mineral finish 
Production: Made using the traditional method with no additives, stabilization, or filtration. The grapes are hand harvested, destemmed, and soft treading in the winery. Fermentation begins in stainless steel tanks and finishes in bottle. 
Grapes: Made from 100% Montonega, another name for the Parellada variety. The grapes are sourced from vineyards in the Montmell Mountain with calcareous, stony, and poorly developed soils. 
Alcohol content: 9.5% vol. 
Serving temperature: 6º - 8ºC.
