Established in 1673, Tamanohikari's thirteen generations have dedicated their craft to strictly Junmai-style sakes, while upholding Omachi rice as the premium rice for their sakes.  Tamanohikari's Black Label Junmai Daiginjo is exquisitely defined, with Bizen Omachi rice polished to 35% using their henpei (flat) polishing method.  This is the pinnacle of Tamanohikari's sakes, revealing gorgeous notes of pear, melon, lychee, and apple.  It's elegantly smooth.  Pair it with prosciutto ham, filet Mignon, or Chinese-style steamed fish.
