The Truth Malters team visited the ROCHFORT Distillery in South Australia in 2019 and after trying many fantastic single malts straight from the cask in the warehouse, this is the one that was chosen to be our official launch of ROCHFORT in Canada and our next bottle in our Chapter Series. To learn more about the history of the cask and process used please read below, these quotes and notes are from the Master Blender himself.
We have hand selected a local South Australian Export Pilsner Malt which produces a rich honey coloured appearance and a highly sweet, yet smooth spirit.
Using traditional methods of production, we pay attention to the temperature of the water whilst “mashing in”. The key is to make sure the grain doesn’t overheat, whilst maintaining the optimal temperature for starch conversion to sugars. We ferment in open top French oak fermenters for a five-day period before distilling through our custom fabricated copper wash still. A run through our custom designed copper spirit still on day seven finalizes refinement of the new make spirit.
Winery Partner
Coriole was founded by Hugh and Molly Lloyd in 1967. In 1969, the first Coriole wine was released and half a century later, the Lloyd family continues to produce wines in McLaren Vale using the same vines.
Barrel Selection - “Coriole White Port Cask”
A remarkable timepiece displaying the history and flavours of maturation over the generations. Over 100 years old and being passed through several families, this fortified cask was taken on by the Lloyd family in 1967 and was nurtured over the remaining decades. One of the most spectacular casks we’ve had the pleasure to work with over the years, its intensity of character and depth are astonishing.
TASTING NOTES:
Color: Dark Mahogany Wood
Nose:
You are immediately greeted with a malty sweetness of vanilla and dark roasted fruits, hints of spices, cinnamon and dark chocolate sprinkled over a floral basket arrangement.
Palate:
A beautiful balanced tingle of sweet and spices on the front palate slowly fading away to a thick butterscotch and cocoa taste. Then you are hit with a perfectly balanced mix of buttery oils and malt biscuits. In the background you can pick out a lot of notes that bounce in and out to add to this complex taste profile such as roasted smoky barley, hazelnut, honey and hints of cigar box and spices but that sweet white port dark taste stays throughout.
Finish:
The way this one coats your complete palate from top to bottom is fantastic. A special Single Malt that is complex and full of flavors to enjoy yet is in no way overwhelming, you would never guess this comes in at 65.1%, as it is just too smooth. You can feel your taste buds bursting with sweetness and spices while the malt biscuit taste leaves you licking your chops for one more sip. This is a great Single Malt Whisky that we are happy to introduce as our Chapter 4, as it states on the bottle, “The TRUTH is… Whisky matured with the history of a century-old cask writes its own chapter.”
